One of the largest retail shopping centers in Colorado Springs, University Village, is adding these stores:

PETCO: A 12,000 sq.ft. store. Construction will start in April between Kohl's and Famous Footware. The opening is planned for October.

HACIENDA COLORADO: This Mexican restaurant plans to open an 8,500 sq.ft. building in October.  The restaurant will include patio areas, fire pits, lounge areas and a rooftop food and bar area with mountain views.

BONEFISH GRILL; This upscale national seafood chain plans top open its 4,500 sq. ft. restaurant in mid June.

WHICH WHICH: This Texas based sandwich chain just opened. They plan to open a second location on North Academy Blvd. this summer.

IL VICINO: This Italian restaurant is planning a late June opening in a 3,000 sq. ft. building.

XFINITY: Comcast just opened a 5,300 sq. ft. store, which allows Comcast customers to test and learn about the company's latest products and services.

According to the Independent, The Royal Buffet  on 3680 Citadel Dr. N, in the former Red Robin location in Colorado Springs, has opened and is serving more than 100 items, ranging from sushi and hibachi plates to Chinese Szechuan offerings and American steaks.

According to the INDEPENDENT, Trinity Brewing Co., 1466 Garden of the Gods Rd. in Colorado Springs, will soon more than triple their brewery's production ability. Jason Yester, the owner, stated that he will knock off four or five guest beers (still leaving Trinity with upward of 20) to make room for more house beer. The Slap Your Mamma double IPA will come on tap full time, as well as a new Belgian style Pilsner. Bottle availability will also increase with new offerings like Le Capitan, a 12 percent ABV tribute to New Belgium Brewing's Peter Bouckaert, brewed with endive, Buddha's hand, grains of paradise and cacao. For the gluten free crowd they offer cold house sake.

This casual, family owned restaurant at the southeast corner of Academy Blvd & Flintridge Dr. is known for its delicious green chili, crispy flautas, great barbacao al pastor, great burritos, light tamales with green chili, etc. Everything tastes homemade, freshly prepared.  Beer on draft, great house Margaritas. Friendly, knowledgeable servers go out of their way to make you feel welcome. This is our favorite Mexican restaurant in Colorado Springs. We were joined one night by 15 friends and everybody loved their meal! Check out the menu below.
